Moontower Bakery offers organic breads and other items made with fresh-milled grains.  While not for those with celiac disease, many people with some gluten intolerance are able to enjoy these breads because of the long-fermentation and sourdough starter (full of wild yeast and lactobacilli goodness).

Moontower Bakery was started in 2020 by Yam Tolan, a baker with a unique background in food, education and photography. Yam has been an avid foodie for his entire life, running a catering company in high school, working in various sectors of the food industry while he pursued undergraduate and graduate degrees in photography. He is a Professor of Art at Austin Community College and his photographic work has been shown and collected widely.
