* Khorasan is an ancient wheat closely related to durum known for its smooth, buttery, nutty flavor, and its high protein and nutritional content. Khorasan wheat contains a high mineral concentration especially in selenium, zinc, and magnesium, has 20-40% more protein compared to modern-day wheat. Khorasan’s flavor and nutritional attributes* make it an excellent flour which bakes up with a beautifully gold colored crumb. Khorasan is more easily digested and tends to be more gut-friendly with gluten-intolerant people; it is not, however, considered suitable for people with celiac disease. With the addition of sprouted Khorasan grains, this loaf gains the health benefits of the germination process breaking down some of the starch as well as phytate, a form of phytic acid (often referred to as an "anti-nutrient") which decreases absorption of vitamins and minerals in the body. Sprouted grains have more available nutrients than dormant grains, including folate, iron, vitamin C, zinc, magnesium, and protein. Plus the long, slow fermentation of sourdough bread, important nutrients such as iron, zinc and magnesium, antioxidants, folic acid and other B vitamins become easier for our bodies to absorb. Sourdough also produces a lower surge in blood sugar than any other bread, welcome news to diabetics.
