So much of the bread you find in supermarkets is made from wheat that has been stripped of nearly 80% of its nutritional value to create refined white flour. It’s also full of a lot of ingredients that, frankly, can’t even be called food. Taste? Nutrition? Sustainability? Those are afterthoughts in a large-scale, centralized food system.
